We need::
- 1 whole Camembert wheel (250g), in its wooden box
- 2 tbsp Irish honey
- 4–5 fresh thyme sprigs
- 1 small clove of garlic, thinly sliced
- 1 tbsp dry white wine or apple cider
- Pinch of black pepper
- Crusty sourdough bread or oat crackers, to serve
Method
Remove the Camembert from any plastic packaging and place it back in the bottom half of its wooden box. Score the top of the rind with a sharp knife in a crosshatch pattern.
Push the garlic slices and a few thyme leaves into the cuts. Drizzle the white wine over the top, followed by half the honey. Season with a little black pepper.
Place the box on a baking tray and bake in a preheated oven at 180°C for 15–18 minutes, until the cheese is completely melted and bubbling inside.
Remove from the oven, drizzle with the remaining honey and scatter over the fresh thyme sprigs. Serve immediately with sliced sourdough and crackers for dipping.
Tip: If the wooden box feels loose, wrap the outside with a strip of foil to hold its shape during baking.
