Cooleeney Tipperary Brie is a handcrafted Irish farmhouse cheese made in Co. Tipperary from pasteurised cow’s milk sourced from the farm’s own herd. Produced using traditional methods and vegetarian rennet, this elegant Brie-style cheese is renowned for its creamy texture and delicate flavour.
Beneath its white bloomy rind lies a soft yellow paste that gradually ripens from the outside in, becoming beautifully smooth and creamy when fully matured. The flavour is mild and buttery, with subtle notes of woodland undergrowth and fresh grass that reflect the quality of the milk and the surrounding countryside.
Carefully matured for up to ten weeks, Cooleeney Tipperary Brie develops a rich, luxurious texture while retaining its balanced and approachable character. A superb addition to any cheeseboard, it pairs particularly well with sparkling wine, fresh fruit and artisan crackers.
