Sobhriste is a handcrafted Irish farmhouse cheese produced by Lost Valley Dairy and Creamery in Co. Cork from raw cow’s milk and traditional animal rennet. Named after the Irish word for “fragile” or “delicate”, this distinctive cheese is celebrated for its crumbly texture and beautifully balanced flavour.

Inspired by traditional Caerphilly and Lancashire styles, Sobhriste is made using a milled-curd technique and carefully matured to develop its characteristic texture and depth. The paste is fresh and slightly crumbly, offering gentle lactic notes, buttery richness and a clean, savoury finish.
